The creation of Champagne wines is above all the passionate tale of man’s age-old affair with Nature: sometimes harsh, sometimes delicate, endlessly variable; always the source of man’s richness and diversity.   Turning the complexity of Nature to Man’s advantage has brought about the creation of one of the world’s most sought-after wines, renowned for its character and finesse. 

 Of all the stages involved in that creation, blending or assemblage  is among the most important. It is the decisive moment that brings together all of the work that precedes it.

Assemblage is the art of creating a harmonious blend of wines with a natural tendency to secondary effervescence.  It is without a doubt the founding moment of these unique wines called ‘Champagne’.
